My business is required to track lot numbers for all items that we ship. How can I track lot numbers in my Nexternal Order Management System.

The best way to track lot numbers is to create a line item custom field called "Lot Number". This can be done by going to your order list screen and clicking "Preferences" button at the top. Scroll down to Line Item custom field. Once created, there will be a field at the line item level where you can input your lot numbers. This data can also be updated via the Excel Order Import.
