Is there a way to get "SOLD OUT" put on the main category page with other products when they are sold out? Some find it irritating to click on the product only to find that it is sold out.

You can adjust this in Layout / Main Layout - Edit / Visibility Rules / Display Add to Cart. Set this to both and finish. Note that this will also place add to cart buttons on your category pages next to or below your products.
